Step 1.
- Prepare the milk clarification by gently heating 1 liter of whole milk until warm, not boiling.

- Slowly stir in the citrus juice (lemon or orange) and let it curdle for about 10 minutes.
Step 3.
- Strain the mixture through a fine mesh sieve lined with cheesecloth to separate the solids from the liquid.
Step 4.
- In a shaker, combine the clarified milk, rum, simple syrup, and bitters with ice. Shake well until chilled.
Step 5.
- Strain the mixture into a punch bowl.
Step 6.
- Serve over ice and garnish with grated nutmeg.
