Step 1.
- Add Irish whiskey, fresh lemon juice, simple syrup, and egg white into a shaker without ice.
Step 2.
- Dry shake vigorously for about 15 seconds to emulsify the egg white.
Step 3.
- Add ice to the shaker and shake again for another 15-20 seconds to chill.
Step 4.
- Strain into a chilled coupe glass.
Step 5.
- Garnish with a few drops of Angostura bitters on top of the foam and a lemon twist.
