Step 1.
- Chill a cocktail glass by filling it with ice water.
Step 2.
- In a cocktail shaker, combine 2 oz of sake, 1 oz of umeshu, and 0.5 oz of fresh lemon juice.
Step 3.
- Add ice to the shaker and shake vigorously for about 15 seconds.
Step 4.
- Empty the ice water from the chilled glass.
Step 5.
- Strain the mixture into the chilled cocktail glass.
Step 6.
- Garnish with a slice of plum and a mint sprig.
