Step 1.
- Chill a coupe glass by filling it with ice water.
Step 2.
- In a shaker, combine 2 oz of sake, 1 oz of fresh yuzu juice, and 0.5 oz of simple syrup.
Step 3.
- Add ice to the shaker and shake vigorously for about 15 seconds.
Step 4.
- Dump the ice water from the chilled glass and strain the mixture into the coupe glass.
Step 5.
- Garnish with a thin slice of yuzu on the rim or float it on top.
