Step 1.
- Add 2 oz of Fino sherry, 1 oz of simple syrup, and 1 whole egg to a shaker.
Step 2.
- Dry shake (without ice) vigorously for about 10 seconds to emulsify the egg.
Step 3.
- Add ice to the shaker and shake again until well chilled.
Step 4.
- Strain into a chilled coupe glass.
Step 5.
- Garnish with grated nutmeg.
