The Fino Martini

Instructions
- Chill a martini glass by filling it with ice water.
- In a mixing glass, combine 2 ounces of fino sherry and 1 ounce of dry vermouth.
- Fill the mixing glass with ice and stir gently for about 30 seconds until well chilled.
- Discard the ice water from the chilled martini glass.
- Strain the mixture into the chilled martini glass.
- Garnish with a single olive or a twist of lemon peel.
