A refreshing twist on the classic sour cocktail featuring Sherry as the base spirit and a creamy texture from the egg white.

Instructions

- Chill a coupe glass by filling it with ice water.
- In a shaker, combine 2 oz of Fino Sherry, 3/4 oz of fresh lemon juice, 1/2 oz of simple syrup, and 1 egg white.
- Dry shake (without ice) vigorously for 15 seconds to emulsify the egg white.
- Add ice to the shaker and shake again for another 10-15 seconds until well chilled.
- Remove the ice water from the chilled glass and double strain the mixture into the glass.
- Garnish with a twist of lemon peel.
